Congrats, National Pizza Pie Day, and some goods!!!!

Hello !!!!

Today is National Pizza Pie Day!!!
So eat some yummy pizza or make some yummy pizza today !!!
Here is a Healthy Pizza Recipe thanks to http://www.hungrygirl.com/
Loaded ‘n Oated Spinach & Mushroom Girlfredo Pizza

For Crust

1/4 cup Fiber One bran cereal (original)

1/4 cup fat-free liquid egg substitute (like Egg Beaters Original)

1/4 cup regular oats (not instant)

For Toppings

1/2 cup fresh spinach, coarsely chopped

1/3 cup chopped brown mushrooms

4 thin rings red onion

1/4 cup shredded fat-free mozzarella cheese (or alternative below)

One-half wedge The Laughing Cow Light Original Swiss cheese

1 tsp. fat-free sour cream

1/4 tsp. crushed garlic

dash paprika

dash salt, or more to taste

dash black pepper, or more to taste

Directions:

Preheat oven to 400 degrees.

Place the cheese wedge half, sour cream, and garlic in a small microwave-safe bowl. Microwave for 15 seconds. Add 1/2 tbsp. water and a dash each of salt & pepper, and then mix to combine. This is your Alfredo sauce. Set aside.

Place Fiber One and oats in a blender, and grind until a breadcrumb-like consistency is reached. In a small bowl, combine the “breadcrumb” mixture with egg substitute. Add a little salt & pepper, if you like. Mix well.

Bring a pan sprayed with nonstick spray to medium heat on the stove. Spoon crust mixture into the pan and, using the back of the spoon, smooth into a circular shape (larger for a thin crust, smaller for a thick crust). Raise heat to medium-high. Spray a spatula on both sides with nonstick spray. Allow crust to cook until the bottom is lightly browned (about 2 minutes), and then gently flip with the spatula. Once both sides are lightly browned, remove crust from the pan, and place it on a plate to cool.

Remove the pan from heat and re-spray with nonstick spray. Return it to medium heat on the stove. Add the spinach and mushrooms and cook until spinach has wilted, about 1 minute. Remove from heat and set aside.

Spread Alfredo sauce evenly onto the crust, leaving a border of about half an inch. Evenly distribute spinach and mushroom mixture over the sauce, and sprinkle mozzarella evenly over the veggies. Top with red onion and sprinkle with paprika.

Place pizza on a baking sheet sprayed with nonstick spray (or directly on the oven rack), and bake in the oven for 10 minutes. Cut into quarters, and mange!

Got some Frozen Fruit Combo, Kiwi, Peaches, Pineapple, Mango, and Cantaloupe
Organic Clover Sprouts too!! I love these in wraps or in salads!!
I also got a couple more things for my secret bloggie valentine and sent her package off today!!!
22 bux later at UPS to send it, I am just happy it will get there in time!!!!
Here are some eats I have been stuffing my pretty little face with!!!
(not all my eats, just some,  I eat WAY more than this, shhhhhhh!!)
Mighty Maple PB Caramel Breakfast Cookie!!!
Mighty Maple PB + oatbran+ Eggwhite
Cottage Cheese + Pumpkin + Pumpkin Pie Spice + Kashi Honey Puffs
and
Banana slices on top!!!
Lots of Salads with veggies and Soy Crisps on top for crunchies!!!
LaTortilla Wrap + Crab + Alfalfa Sprouts + Hummus
All wrapped up! Added spinach too!!
and a HUGE ORGANIC PEAR!!

Polaner Sugarfree Raspberry Jelly with Fiber!!
I am loving this stuff,  I love that it has fiber in it!!!
I give it a 7 out of 10 due to being sweetened with Splenda : p
But Im loving it!!!!
Uses for this Yummy Jelly……
- mixed in with some cottage cheese
-spread on some whole grain rice cakes
-mixed with Laughing Cow Cheese on a wrap with Turkey! Yum!

You and your man are way too cute!!! Love that pic! Thanks for a great recipe. I was always curious about that one! Have you made it yet? Your veggie chili looks awesome too! Its rainy and cold here and that would so hit the spot. The breakfast cookie with mighty maple just sounds so awesome as well. I gotta try that stuff!

Hi Katie!!! Glad you got the pkg off. But dear god, 22 bucks. I take it you procrastinated one day too long and rather safe than sorry, you pony'ed up for expedited delivery. Well, she's worth it and you're amazing!

Your pb protein bars in the last post couldnt be simpler and more yummy loooking! I have never used 1.5 cups of protein powder all at once but that is one great way to use it…especially for me, I have a flavor I am not thrilled with and with all that PB, it would just get masked which would be a good thing:)

I've tried another Hungry Girl pizza similar to this one and it was fabulous!

I love slowcooking chili – it gives it the perfect gushy/sloppy texture. Plus it makes the house smell really good. :-)
