{ Cup } Kate

Evening loves!!!!!! Hope everyone had a wonderful Thursday!  :-D Mine was glorious! I ran errands, organized, and read the last of my book

 

This book I picked up and started reading and could NOT put down! I loved it, it was a story of courage and inspiration! If you have not read this yet, its a must read  ;-)

 

I lounged around in my new slippers, they are so comfy!

 

I was in a cupcake mood, I saw a wonderful cupcakes for two recipe on Jessica’s Blog at How Sweet It Is and I knew it was a { Cup } Kate day!

 

I followed her recipe for the most part but made some changes  ;-)

 

1 egg white

2 tablespoons stevia

2 tablespoons of unsweetened applesauce

1/4 cup soy flour

1/4 heaping teaspoon of baking powder

1 1/2 tablespoons almond milk

1 tbsp of strawberry extract

 

Frosting for the cupcake –     SunWarrior Protein Powder Vanilla mixed with Walden Farms Chocolate Dip

 

 

 

It was delish and I have another for dessert tonight  :mrgreen:

Oooh your cupcakes turned out so cute! They look just ready to pop in your mouth :) I hate baking but I think cupcakes are the most fun treat. That and popsicles.

Question: do you taste the ‘strawberry’ flavor from the extract? I do not have anything but vanilla, but wondered if the flavor really makes a differencE??

I’ve never tried soy flour.
I hear Sun Warrior is expensive :(
how do you make your frosting? (ratio of water and how many grams of powder?)

oh man, i’m so making these…right now! I’m using coconut flour though (in your recipe you said soy flour!?) your recipe index confused me!

I used soy flour, coconut flour might work too! I never tried it with coconut flour!!!!
