Coconut Flour Cocoa { bake }

by Healthy Diva on July 19, 2011

Good Morning!

Happy Tuesday  :mrgreen:

*Mike does get best husband award

Last night I was going to make coconut flour pancakes to have for this morning, but when I combined the ingredients, the batter seemed way too runny

I did not want to waste, so I thought of an idea, I had 2 ramekins that I have been meaning to use, I sprayed the ramekins, put the oven on 350 degrees and baked for about 25 minutes

And to my pretty eyes, it worked, and came out fluffy and yummy!

I squirted some protein vanilla frosting in the middle to make it more flavorful

I like to call these….

Coconut Flour Cocoa { Bakes }

- 3/4 egg whites

- 2 dropper squirts of NuNaturals Cocoa Bean Extract

- Stevia

- 2 tbsp coconut flour

- 3 tbsp almond milk

- 1/2 tsp baking powder

- 1tbsp of Coco Cardio ( beet juice  powder and Cocoa Powder )

The Pancake Batter fail turned into a win! These were so good, and moist !

The cocoa combo was amazing , and I will be making these again  ;-)

They re-heated perfectly this morning too, not dried out, still moist, and delish!

I added some sugar free caramel  syrup on top too  :-D

Have you ever had a recipe fail turn into a win?

Those look perfect! :) I’ve def had recipe fails. I’ll combine ingredients, write it all down, mix it together – and nope.then I start adding some of this and some of that and eventually, i end up with something beautiful. Problem – I always forget what I added to make it that way! :)

Good job on your recipe fail turned winner!! Your bakes look soo good! Usually when I think i’m having recipe fail, it fails… I’m pretty good at know if a recipe will be a winner just by looking at it before deciding if I want to make it!

I’ve had bad experiences trying to make pancakes with coconut flour, too! My batter wasn’t too runny, but no matter how long I cooked them, they wouldn’t firm/crisp up… they just stayed all mushy and gloopy. In the end I just got frustrated and scrapped them, but I wish I had thought to throw them in the oven and bake them because these little bakes look delicious!

Okay so first off- I LOVE YOUR BLOG! I’ve been reading it for over a year and as an 18 year old student i strive to be like you! You are an amazing mother and have the best workouts/recipes. I was wondering, however, if you could do a post of nutritional yeast? I just bought some and I’m not sure of how to use it. Like, can I make sauces etc? I’m lactose intolerant so having a “cheesy-like” substance to swap out is so important! any advice/recipes/tips would be appreciated! : )

Mary!!! People like you that come out of hiding make me HAPPY!!!!!! Nice to meet you and thank you for the kind words! Means the world to me when people say that they love my little blog, and they love what I post : ) Now make sure you pop out of hiding more, ok?! : )

Nutritional Yeast, is yum!

I like to sprinkle it just like it is on a salad ! or make a dressing mixing 2tbsp nutritional yeast, 2 tbsp hummus, and a little water, best sauce/dressing ever!!

Spray some popcorn with a olive oil spray or coconut oil spray ( i use that) and then sprinkle nooch over top the popcorn and mix around for a yummy popcorn cheese yum!

You could also use it to make some mac and cheese with, just sprinkle it on some noodles!

Hope this helps a little! Thank you again Mary!!!

YUM those look great even if that were first a mistake ;) We have had many recipes/meals just like that. I think it is great because being in the kitchen is all about making mistakes and finding masterpieces :)
