Potato Chip { chicken fingers }

Good evening! Hope everyone had a great start to the week!

I really enjoyed reading everyone’s comments on the calorie post, and I love that we all can just live life and find what works for us, counting or not!

I got the BEST package ever today, Sara came to my rescue!

My favorite  soy crisps EVER! They are whole foods brand, so you can only get them there!

I love them, and had no more, and she also sent me some of my favorite bars!

Im so happy Sara and I became friends through our blogs, her and I really hit it off when we met, she is a beautiful, sweet, and awesome person! A true friend for life! I can’t wait to see her at HLS in August!!

I had some chicken tenders that I bought today at the store, but the date was best by  July 11th, so i had to cook them up for dinner tonight and I made them extra yummy!

I had these sea salt spud delites that I received in a great package from Glenny’s a while ago, and I am not a potato chip eater, so these have been lonely, but tonight I had a plan for them!

Potato Chip crusted chicken fingers! These were the bomb! I have some left over for tomorrow too, since i had to cook all the chicken!

Recipe -

- chicken breast strips

- egg whites

-  sea salt potato spud delites

Take the chicken strips, dip them into a bowl of egg whites, make sure you fully coat them, take the potato delites and crush them by hand or in blender ( I did by hand ) and put crumbs in bowl, then take each egg white coated chicken strip and roll in the bowl of crumbs to fully coat

I cooked mine on the George Forman Grill, but you can cook in the skillet or oven too!

I used a dipping sauce which was a mix of mustard, balsamic, and stevia!

I had a salad with veggies, spinach, and Annie’s Mango dressing as well  :-D

I have to go do some computer stuff now, Mike and I looking to book a flight to Charleston for September ! His best friend, who was his best man, lives there, and we might go visit him again! We have one time before!

The chicken strips look great! What a fun idea :)

I’ve been adding pumpkin to my overnight oats occasionally. It’s a winner!

I think that’s like the best idea ever, and I’m not even a chicken eater. Hrm. I wonder if it can be done with tofu… only one way to find out, I guess :D Although I haven’t been too creative in the kitchen lately… I think there’s something about the summer that takes away my desire to cook, so I end up just rotating through the same tried-and-true favorites. I need to change that! Especially because there are so many delicious recipes out there that I want to try, and my list of things to make isn’t getting any shorter!

U could totally do this with tofu! Tofu fingers! I have seen it done before! get it girl!!!

Oh my eats get boring, I am trying to add some new stuff in there ; )

What a great package! I love getting packages in the mail – it just makes my day. :) Even if it is something I bought for myself online – it’s like getting a present and I love presents. :)

I love you!!!! So glad the package arrived safely, and that the people in the post office didn’t steal the soy crisp yums! :-p I’ll bring a stash to HLS! And seriously, any time you need more, let me know!!

Your potato chip-crusted chicken tenders look to-die-for delicious! I’m so going to try that recipe this week! I just bought two pounds of organic tenders and am starting to get tired of them. Time to mix things up Healthy Diva style! Oh and I love the dipping sauce you made…I often add stevia, mustard and balsamic to make salad dressing!

Those chicken tenders sound really good! I made goldfish crusted chicken fingers once and it was so tasty! Great idea with the chips! :)
