Blessings and Pumpkin Pancakes

 

Good Morning!

I just had a incredible stack of pancakes and wish it never ended…..

Coconut Flour Pumpkin Pancakes  :mrgreen:

Topped with Sunwarrior Protein Frosting, Maple Syrup and some yummy crunchies……

Sweet Potato and Cinnamon snax crushed up on top  😉

Ingredients for these beauties  :mrgreen:

– 2 tbsp coconut flour

– 1 tsp flaxseeds

– 3/4 cup egg whites

– 3 tbsp water

– 1 tsp baking powder

– 3 tbsp pumpkin

Cinnamon and Pumpkin Spice Sprinkles in there as well 

I loved how these pancakes turned out, sometimes cooking with coconut flour can be tricky, they crumble, but with the pumpkin I think it helped stay together better!

I know we all count are blessings every day , as we should.

Every day you wake up is a blessing  😀

I have 5 Blessings to share today, when I think of my blessings it makes me very happy, and its good to think of blessings when you are having a bad day or going through a tough time .

1. My handsome son

Anthony means the world to me, beyond words. I am so blessed to have him in my life, and I thank god every day that he lets me be with him  😀 I see sad things happen that are kid related, and it makes me hold Anthony much tighter.

2. My husband Michael 

I don’t know where to begin, it was fate how we met, and I am so blessed he came into Anthony and I’s life!

He works so hard to support our family, he treats me like a princess, and he is the best step dad to Anthony!

3. For being Strong and Healthy

I am blessed that I am and no matter how healthy and strong, things can change in one second, so I am blessed for every day that I am alive  😀

4. My parents   :mrgreen:

My mom and stepdad are wonderful, I love them so much! I am so happy to be closer to them now since I moved back to PA! I can see them more now , which is great!

5. My Best Friend Forever Cassie

They say you are lucky to get one good friend for life, and she is that one friend  😉

Cassie and I have been friends since I was 13 and she was 12, I love her so much !

I have many more blessings, and I gain more blessings as the days go by, but these are just 5 for today !

    I LOVE your counting your blessings. I need to start doing this more – not because I don’t appreciate my blessings, but because I need to focus on that more when things don’t go how you want them to (it seems like that a lot more lately). My blessing right now is me lying in bed reading blogs and my husband’s arm around my waist while he sleeps – I love that!!!

      omg Char that is so sweet! my heart just melted, haha! I love “love” ! SO sweet what you said about hubby in bed beside you! YES< counting blessings when things are not so great or going through a rough time, is so good mentally, it really does help ; )

    thank you for the constant reminders to count my blessings, angel! I think I get way too stressed up in the stressors or life that I forget all I have to be grateful for! I cherish your optimism and positivity so much!!!

    p.s. where do you find your coconut flour?! I neeeeeed.

      I got it at my local organic store, its Bobs Red mill brand, I sell it in my store too!

      You should be able to find it though somewhere!

    I love this. I think sometimes its hard to remember all of our blessings in life. Life isn’t always easy, times get rough but it is SO important to remember WHY we are here and know that we are loved! Counting blessings is the only form of math I love 😉

    Beautiful post from a beautiful lady!

    My blessings are:

    1) My husband Joe- my best friend! He supports all of my endeavors and believes in me more than I believe in myself sometimes!

    2) My parents- who raised me to believe I can do ANYTHING I set my mind to and work hard for. I’m so grateful they supported my decision to become an actor! (Most parent’s worst nightmare…lol)

    3) My sisters- they’re pieces of me! The three of us have been through a lot together but we know we always have each other no matter what.

    4)My friends- the beautiful and inspiring people who’ve come into my life for many different reasons motivate me to be the absolute best me I can be!

    5)My life- specifically my careers as a performer and a teacher. I know there are many people who aren’t fortunate enough to go to work every day and be 100% in love with what they do- I’m so grateful to have the opportunity to touch the lives of my students and my audiences!

    It’s always good to look back and be thankful for the people in your life! I am so thankful for my hubby, my Tia, my mom and dad and sister and, and everyone else. I don’t see them all or talk to them all enough…but I hope they know how much they mean to me!

    Aww! So sweet! The picture of Anthony with the cookie is so cute!!

    My one blessing for the day is that I have a steady job and healthcare. I take it for granted sometimes when I complain about work or commuting, but I am so thankful to be in a good place work-wise!

    You have so many beautiful people in your life!
    Every day as I walk to work (which is quite early, and Im often a little tired), I try to only feel the positive feelings I have. I always say to myself "I will make this day count". As in, Im going to make the most out of it, even if all im going to do is work and workout and do regular stuff. I pray for all the wonderful people that Im so blessed to have in my life, and I tell my body that I will do my very very best to fuel it the way it wants me to! Counting our blessings, and being grateful, makes life so much more beautiful!
