Protein Pumpkin and Carob Pie

by Healthy Diva on October 9, 2011

Sundays to me are…..

Relaxing, rest day from gym, and being creative in the kitchen  :-D

I decided to make a yummy , healthy , and protein filled treat !

Protein Pumpkin and Carob Pie

Now it might not be your normal pie because….

It has no crust , but its round like a pie  ;-)

Ingredients  for this “No Bake ” Pie  -

- 1 1/2 cups of kamut puffs

- 2 scoops of protein powder ( i used sunwarrior vanilla )

- 1/4 cup carob chips

- 2 tbsp almond butter

- 1/4 cup pumpkin ( u can use more , up to you! )

- Stevia

- Cinnamon

- Water

To make -

In a bowl combine protein powder and water, gradually add a little water until it becomes a frosting like texture, then add pumpkin, almond butter, kamut puffs, carob chips, stevia , and cinnamon to the bowl

Mix all together!

Spread mixture into a pie pan and freeze for an hour.

You can cut into slices and transfer into tupperware to store in freezer to keep well!

A slice of healthy and protein filled goodness  ;-)

It was a little gooey still on bottom, which made it so good! Use a fork for sure  :-D

If you try it, let me know!

I hope you enjoyed this little recipe, its fun to be creative and I hope to whip up more healthy treats often!

Have a beautiful night!

Katie xoxo

OK I have to try that – protein-rich dessert? I’m there! I always need more protein as a vegetarian so I appreciate any suggestions :) .

This looks like such a cool recipe! And it’s like a low calorie version of pumpkin pie!

Ok I mean I know it’s not EXACTLY pumpkin pie, but it’s close enough for me ;)

Hey love! You still away?! How was your vacation/honeymoon?!!

I think it would yes for sure! After frozen though, I would put in fridge, mine didnt last long , it got freezer burnt even in tupperware, I think keeping in pan, freezing, then when frozen, maybe just keep in fridge, it is good, but hard to keep good for long!
