Pump-Kined { Up }

by Healthy Diva on October 2, 2011

Good Morning ! Its freezing here and I am so not ready for the cold yet!

I am always ready for cold overnight oats though

These Pump-Kined Up oats are a little more special with some “candy” on top  :-D

Julie always makes peanut flour candy, so I decided to make sunwarrior protein candy!

* Protein Candy *

I made protein frosting, spread it on a plate, covered, and froze overnight!

In morning cut into pieces and top on your oats  :-D

Thank you Julie, you are a GENIUS!

Overnight Pumpkin Oats

1/2 cup oats, 1 cup water, 1 tbsp chia seeds, 1/2 cup pumpkin

Sprinkle these beauties in there too , the best friends to pumpkin oats  :-D

 ( I added maple syrup on top as well )

Oh and the black speckles on top of the oats you saw?

It was the Trader Joe’s Chocolate, Coffee, and Sugar Grinder sprinkles on top!

In case you care to know , last night’s dinner was a salad  :-D

Spinach Salad with veggies, grilled chicken tenders, and hummus  :-D

Today Anthony and  I will be eating dinner at the house of these lovely peeps…..

My parents house!

Im so excited to be able to do dinner there, it has been forever, but now we are close to them again!

So happy to be back in PA  :mrgreen:

Who loves Pumpkin oats and thinks that they make your oats MORE voluminous ?

They do for sure I think  ;-)

Have a great Sunday!

Katie xoxo

oh man, i miss my parents! haha! I always say that when I’m “older” I’m going to move down south, but I just don’t know if I could bear to be that far from them. I’m such a home body! It’s funny too, because high school I was anti-mom and dad. Now I can’t get enough of them!

here’s to a beautiful and love-filled sunday :)

Hey just found your site, I’m also in Pitt and hating the rain. I’m going to have to try the peanut flour candy, and your recipe for the protein candy. If you get a chance try protein powder with coconut oil – it comes out like caramel.

Pumpkin definitely makes oats more voluminous! :) Love it! It makes pancakes more fluffy too if you add a small amount! Enjoy the time with your family! Sounds like a blast!
