Pumpkin Oat Carob Chip Cookies

Good Morning loves !

A night of rest, Its Always Sunny in Philadelphia, and sleep was good for me.

I feel better today, and think this cold will lose against me!

Cereal for breakfast

Barbaras Cinnamon Puffins + Kamut Puffs + Frozen Cherries + Almond Milk

Topped with protein frosting  :-D

I remember I used to eat cereal for breakfast EVERY day! I used to actually eat the same kind every day too.

It was the Kashi Warm Cinnamon Heart to Heart cereal.

Before I met Mike, I would not cook a lot, and I was busy with traveling, work, and my son, so cereal was the star of my life even for dinner!

I remember one time my mom bought me 3 boxes of the Kashi cereal, and 3 days later, they were gone! I ate it that much, it was my meals a lot of times, crazy!

I am glad now that I do cook and its not a cereal for every meal lifestyle anymore  :-D

Since you guys just listened to me ramble, I will stop rambling  and share that cookie recipe…

Pumpkin Oat Carob Chip Cookies

 { Ingredients }

- 1/2 cup oats

- 3 tbsp egg whites

- 3 tbsp pumpkin

- 1 tbsp almond butter

- 2 packets of sweetener ( I use stevia )

- 1/4 cup carob chips

- 1/2 tsp baking powder

- sprinkles of cinnamon and pumpkin spice

*Preheat oven to 350 degrees

* Combine all ingredients together in a bowl, I mix it all up with my hands. Line a cookie sheet with parchment paper, or spray a cookie sheet with non stick spray, form the cookies into round balls, then flatten on the cookie sheet with a spoon. Bake for about 8-10 minutes.

* Makes about 6 cookies

These were so good, and not crumbly which I was happy about.

Sometimes cookies fall apart too easy, but these stayed together and were so yummy!

They are good eaten just like this or if you want something more to add…..

protein frosting to make it even better  :-D

Mike loved this! It was actually his first time trying protein frosting, and he was amazed by how good it was!

These cookies are super yummy  and easy to make , which I love easy  ;-)

Those cookies look delicious! My favorite cookies are oatmeal raisin or chocolate chip. I love when cookies are still warm right out of the oven. Mmm. :)

you have a cold too! me too! grr! It must be cold season :(
I had colds. although I do love when people have that raspy voice from a cold- dont know why! ha!

cookies sound yummayyy! pumpkin + carob or chocolate? how can you go wrong ;)

I LOVE cereal. LOVE LOVE LOVE… I could eat if for every meal, every day. My favorite is Chocolate Chex. Which is why I won’t buy it. I mam digging the Fiber One cereal. 80 calories. Done!

My fav cookies are Chocolate Chip, PB is a close second though, and yay for sisters. I love mine, I have four of them and when we get together… oh boy… watch out :) Enjoy your lunch lady!

when i was in college i ate cereal EVERY DAY and would combine like 12 different kinds in one big bowl haha i used to combine blueberry chocolate and strawb mini wheats and the milk would turn the ugliest color but it would taste SO GOOD

I’ve never tried carob chips before; are they like chocolate chips but less sweet? Ahh and I love cookies- anything with chocolate or peanut butter or gingerbread!

Mmm…those cookies sound and look so yummy! :-) I’ve ordered my sun warrior and i’m so looking forward to trying protein frosting – you tempt me by putting it on so many delicious things, lol! :-P It feels so good eating more variety and not just one thing, doesn’t it? WHen I was younger and less healthy and educated, I used to commute to work, and I would eat protein bars (the nitrotech double chocolate and peanut butter flavours) for breakfast, lunch and sometimes even dinner, paired with just a bit of fruit. I don’t know how I survived, so unhealthy! :-( Live and learn. I’m so happy to eat well, and eat fresh delicious food now, I could never go back to that! <3 xyx

I used to eat bars for meals to when I was modeling, def not good for you to do, glad you are not doing that anymore ; )

hahaha I totally used to live off of cereal too! In college, I would eat the same cereal EVERY day. It was the Special K Fruit and Yogurt and grape nuts mixed together! I miss those days ;)
