Have a Heart Bran Cookies

by Healthy Diva on January 31, 2012

Good Morning!

The sky was crazy beautiful this morning during sunrise, it has to be the most beautiful sunrise I have seen since Hawaii.

This pic does no justice, but it looked crazy beautiful.

Amazing and so beautiful!

Sorry, Im obsessed with beautiful sunrises, it is just beautiful to stop and stare at. Its going to be 60 degrees today! Is it really winter?! I can not believe the beautiful weather we are going to have today, and yesterday was not bad either. Spring coming fast, I wish, I know this is just a taste of spring. I am sure snow will be coming eventually again, so I will not unpack my sandals.

Dinner

I was craving veggies in my salad bowl last night, and I filled it up with them.

Cottage cheese, Hummus, Trader Joe’s Soycutash Blend, Butternut Squash, Nooch, Spinach

Breakfast

Banana PB Overnight Oats in a Jar were whats up  ;-)

1/2 cup oats, 1.5 cup water, half sliced banana, stevia, flaxseeds, sunwarrior protein powder

Yesterday afternoon, I wanted to make some cookies. I was going to make my carob chip protein cookies but decided to make something else. I wanted something simple and that required no baking, just to be refrigerated.

Heart Oat Bran Cookies

Yummy little treat !

I topped them with protein frosting, extra protein kick and extra flavor kick  :-D

Ingredients

3 tbsp oat bran, 3 tbsp egg whites, carob chips, 1 tbsp almond butter, stevia

Mix all the ingredients in a bowl, flatten out the mixture on parchment paper, cut out into heart with cookie cutter. Place in refrigerator for about an hour. You can top with protein frosting if you want, or eat just as is!

The batch only made 3 cookies, but you could always double to make more!

Have a heart  ;-)

Have a great day everyone and if it nice weather where you are, enjoy it! I know I am going to!

Katie xoxo

{ Questions of the Day }

Most beautiful sunrise you have ever seen was where?

What is your favorite cookie ?

Most beautiful sunrise was in Maui for me, the sunset was AMAZING too!

I have to say chocolate chip wins best cookie for me, the dough and the finished cookie is the best!

you are precious :) those cookies are adorable!

p.s. How do you make your protein oats? I tried whipping up a batch yesterday and they curdled. Ick! It was gross! Totally ruined my day :) (clearly I place too much emphasis on breakfast!)

Hi love! I cook the oats first, then I mix in the protein powder! Not sure why it is doing that for you?! Maybe add more liquid! Love you!

I’ve just recently discovered your blog, and I love it! The protien frosting recipes are GENIOUS, and I’ve made your carob chip & oat protien cookies as well, which me and my hubby loved!! For your salads, do you use frozen veggie blends and then thaw them out and use them cold?? Just curious, they look great!

Those cookies sound delish! :) My favorite cookies are probably oatmeal cookies with chocolate chips, butterscotch chips, and pecans. Kind of decadent but oh so good!

My best sunrise was in Santorini, Greece. We were awake for it every morning and watched the sunset every night. It was nothing short of breathtaking.

Yay I love recipes that just make a few cookie treats for when I want them – then there’s no temptation and I don’t feel I have to eat them the next day! I crave treats sometimes and not others but if the cookies are going to go to waste I eat them and then have had a treat that I didn’t really want. Makes no sense!

I love that you’re up early enough to see the sunrise – although, to be honest, I probably am right now seeing as it’s dark every time I get up in winter, but I’m too busy rushing around to get out of the house to work! Such nice sunrises, I love those pics! You’re right though, I never find that my photos do them justice!

Those heart cookies look wonderful, going to make them. Sunrises are so nice. I don’t really notice them here too much, maybe it’s because I live in the city. My favourite cookies are chocolate chip. Love love chocolate chips.
