Soy Flour Berry Heart {pancakes}

by Healthy Diva on February 21, 2012

Good morning! How can it not be a great morning when you see a beautiful sky like that?

I have an obsession taking photos of beautiful sunrises, the most beautiful ones I have seen of course were in Maui, but the ones here in PA are not too bad  ;-)

Today is Pancake Day! Oh, but not here, in the UK. We have Fat Tuesday here and in the UK they have pancake day before the start of lent. They feast on pancakes, I wanted to join in so I made some for breakfast. Anna over at The Guiltless Life did a fun post on Pancake Day a.k.a. as Shrove Tuesday, check it out here!

Breakfast

Soy Flour Berry Heart Pancakes with sunwarrior chocolate protein frosting

Ingredients -

1/3 cup soy flour

2 tablespoon oats

2/3 tsp baking powder

1/2 tsp vanilla extract

1/3 cup almond milk

stevia

cup of berries

Blend all ingredients together in blender,  make one big pancake on a skillet and then cut out heart shapes with a heart cookie cutter!

Chocolate protein frosting is sunwarrior vanilla, cocoa powder, stevia, and almond butter!

So good and so gone! Ate these up quick this morning  :-D

I am glad I celebrated pancake day with the UK in some way, since I really do not celebrate Fat Tuesday  ;-)

Have a great day friends!

Katie xoxo

Questions of the Day…

Do you go out for Fat Tuesday? Have King Cake for it?

Its pancake day here in Canada too :) We always have pancakes for supper (breakfeast for supper is a win-win situation)… my parents usually cook a bunch of different types and still put money inside for us haha…. child at heart.

I’ve always wanted to try pancakes made with soy flour but i never though they would turn out right. What is the texture and flavor like when using it? I have some in my pantry and i have no idea what to do with it! haha

Its not bad at all! Easy to work with too! Flavor is good, I add stevia to the mix so it always helps! You should try it! You could even just make pumpkin pancakes too with it! Use my recipe here with another fruit if you want too!

I love pancake day!

I’ve already had 2 batches of raspberry, lime & coconut pancakes (had to make a 2nd batch to perfect the recipe for the post I’ve just done…good excuse right! ;-) ) and tonight I will probably make savoury pancakes for dinner and then either crepes or American pancakes for pud. My daughter is having pancakes for pudding at school lunch too…we’ll all be pancaked-out by the end fo the day! :-D

Cute pancakes! I love trying different flavors of pancakes, but sometimes I just crave plain old pancakes with maple syrup. With turkey bacon on the side – something about the sweet and salty combo :)

Super Cute!! I love pancakes and have tempted to make some without grains…like a protein pancake, but have never gotten around to it. These looks tasty!!

HA! I’ve never heard of Fat Tuesday, in Canada we don’t have that! LOL

Since I’m pretty sure I was cajun in a former life, I had a King Cake sent from New Orleans and I will be making Shrimp and Cheese grits for dinner with a big green salad! I also decorated the house in a Mardi Gras theme for the occassion :)

I haven’t decided which I love more…banana cinnamon or apple cinnamon pancakes… both are just delicious with a drizzle of local honey and chopped nuts. :) And of course a mug of coffee.

37 Healthy Diva February 21, 2012 at 4:00 pm

Oh banana cinnamon is calling my name! Sounds so good!

38 Yajaira Reyes February 21, 2012 at 5:16 pm

Just use your favorite pancake mix and mash a banana or two in the batter a tsp or two of cinnamon… ;)
