WIAW { breakfast } Mint Chocolate Protein Pancake

Good morning! Happy Wednesday to everyone, this week is going extremely fast!

If you read my blog daily, you know my blog is just a big tornado of fashion, fitness, food, and happiness. I don’t post my fitness every single day or all my meals every day either. I am just not that kind of blogger, I don’t want to stress if I forgot to photograph a meal or always having my camera glued to me. I do like to take pics of meals I think that are awesome that I make, I need to make some more awesome ones, but  breakfast I do photograph daily.

Breakfast is my favorite meal of the day! I feel breakfast always gets love on here because I do love it. I think its great other bloggers do post all their meals and its great for people to who enjoy seeing that, I am just not that person anymore. I will post highlights of food I think deserves to be on here, but not everything every single day, hope your ok with that!

Since breakfast is the BEST to me, I am going to highlight my breakfast today with….

WIAW Breakfast Only  ;-)
Dark Chocolate and a grater were involved  ;-)
{ Mint Chocolate Protein Pancake }
Topped with chocolate protein frosting and dark chocolate shavings
I am a little late celebrating chocolate mint day, which was Sunday, so I decided to celebrate today!
Ingredients-
2 tbsp coconut flour
3/4 egg whites
3 tbsp almond milk
1 tsp baking powder
stevia
1 tbsp cocoa powder
2 tbsp flaxseeds
2-3 tsp mint extract
green food coloring ( optional )
Topping-
1 scoop of sunwarrior protein powder, stevia, 1 tbsp cocoa powder, water, dark chocolate shavings
To make – mix all ingredients ( except topping ingredients, make in separate bowl ) in blender, pour into a non stick sprayed skilet and cook up. Makes one BIG pancake!
I would say it was everything I wanted in a pancake  :mrgreen:
I am glad this week has been different style breakfast eats, I needed variety in my life!
Off to digest this pancake and some weights are on the agenda for a workout.

This pancake looks so good! I love the idea of having chocolate and mint together in pancake form for breakfast! :) No, I definitely don’t post all of my eats on my blog. I find that boring. I usually post what I had for dinner or any recipes that I’ve made.

Yum! it looks so good as always. I could never possibly remember to take pictures of everything I eat on a daily basis, but It’s cool to see what people eat too.

Yum :) I am starring this on my google reader – I must make this recipe, babe! It looks absolutely amazing.

I have the same views as you. It is just not my thing to post every single thing I put into my mouth on a daily basis. I highlight the good eats and that’s about it :)

This looks like my kinda breakfast!! Coconut Flour is my saving grace right now for muffins and things..its healthy and grain free, LOVE IT!!

I could eat probably 3 of these pancakes ;)

I used to do WIAW. I’m trying to get back into it – hopefully today! I do not post all my meals. That is why I started WIAW – so I had at least one day a week where I can show what a full day typically looks like for me.
Love mint choc. combo need make it! Esp since it reminds me of thin mints and it is girl scout cookie time.

oh wowww that looks delicious!! And I am the exact same way KT!! I sometimes do wish to put on every single meal, but I always end up with just breakfast and MAYBE lunch. Even then, I don’t solely do that b/c I’m kind of like you in that I mix it up with whatever happens that day. :) But, breakfast is a must for me if I post about meals at all. :P

Wow, that looks amazing! Mint and chocolate is my favorite combination. Since I’m mildy obsessed with berries, I would probably add some raspberries or blueberries on top for an added nutrition boost. I’m definitely saving this recipe for the weekend when I have time to eat any breakfast besides instant oatmeal or cereal haha HAPPY WIAW!

chocolate mint is such a great combo! I have a bottle of mint extract that I hardly ever use. It’s needs to be used for this recipe, yum!

Yum! I used to post everything I ate but then I quit. I need to get back on the blogging train. I miss it so much! Moving day is Friday so I can’t wait to be all set up in my own place and get back to a solid routine! :)

I had this this morning…with peanut flour! I was super nervous that it wouldn’t work because the batter was so runny, but it turned out great! And you are right, it was HUGE!! :) Happy Friday!! WOO HOO!
