Protein Bars or Bread?

by Healthy Diva on January 25, 2013

Hey friends! Happy TGIF!

I left you guys off yesterday with a protein recipe coming out of the oven. I love pinterest for finding new recipes, often I never get to actually making the recipes because I am so overwhelmed with how many I pinned!

Well, yesterday I did decide to try one that I knew Mike and I both would love to have for a healthy snack and could be frozen for months.

I pinned these bars on pinterest, but modified the, a little!

Chocolate Peanut Butter and Berry Protein Bars

( adapted from this recipe here over at dashing dish )

  • 1/2 cup chocolate fitmixer protein powder ( you could use any protein powder )
  • 1/4 cup peanut flour
  • 1/2 tsp baking powder
  • 1/4 tsp sea salt
  • 2 tbsp applesauce
  • 1/4 cup silk unsweetened vanilla almond milk
  • 1/4 cup egg whites
  • 4 packets of stevia
  • 1 cup of berries ( I used frozen berries )

Preheat oven to 350 degrees, mix all ingredients in bowl, spray a smal bread loaf pan, and put mixture in. I baked mine for 20 minutes!

I feel like these could be a protein bread too, since they were so fluffy and bread  like, but I cut them like bars. Hmmmm bars or cake?

Either way delicious!

Now I have breakfast ready!

A couple pieces of this with some almond butter on top or crumbled in greek yogurt, perfect!

These bars can be frozen too, which makes it nice to make ahead and have on the go when needed!

I’m not on Pinterest as much as the other social media sites… Whenever I am on though I get sucked in!

I forgot about Pinterest until about a week ago and since then I’ve been pinning recipes galore! Mostly Paleo. It’s really helped me keep track and store the recipes I always plan on making. In fact, it’s helped me actually make them! HAHA.

I just repinned the coconut bread pudding recipe from your board. Totally making it this weekend. :) TGIF!

That bread looks delicious – I could really go for some doughy goodness right now. I’m horrible when it comes to actually making the things I pin, and I think it’s mostly because I just pin too much and get overwhelmed. It’s like there are soooo many delicious looking meals out there that I just don’t know which one to make first.

Happy Friday, love!

Looks like you’ve been putting that new camera to good use! Your pics look great! But having those amazing looking bars as models helps too ;) I definitely want to make these. I’ve been having SO many sugar cravings lately and not been making healthy choices. I think I’ve just gotten a little too lax after the wedding! dangit. These will definitely cure my chocolate craving while still being healthy! YAY! Thanks chickie. Happy Friday!

I have not been on pinterest in forever, oops. Love the bread recipe, and glad to hear it came out fluffy. I sometimes think baking with protein powder dries it out, so I definitely have to try this :) happy weekend!!

I’m so in love with Pinterest. Mostly I use it for recipes, health coaching ideas, fitness routines and quotes. When I make a recipe that I have pinned, I move it to a different board called “Recipes I’ve tried and liked”.

ok what size pan did you make these in? i actually made them, followed your recipe exactly and mine did NOT come out bread-like at all. they were really moist, the only thing i can think of was my pan was too big and they were too thin?

I always check out this website before buying any protein products – http://www.excellentprotein.com – My personal favourite is the Supreme Protein Carb Conscious Bar because of the high protein:carb ratio.
