Skinny Taste Dinner Winner!

Morning and Happy Tuesday! Hope everyone had a great start to the week yesterday, I know MIMM was pretty damn awesome! If you missed it, always next Monday to join in and if you want some happiness, read the wonderful posts that linked up!

Let’s rewind to lunch yesterday…..

I was craving eggs and bacon, so I made a quick sandwich with egg, turkey bacon, and hummus!

My day was a little bit of a headache due to the elliptical STILL not being fixed and Comcast not showing up. Oh well, you have those days! I was just really excited about the elliptical finally getting done and put in the office where it belongs. Fingers and toes crossed that the fourth time will be the charm!

You know what made the day EXTRA awesome and better?

Dinner in the slow cooker, and a new recipe I decided to try from the wonderful Gina at skinnytaste. Seriously she has so many awesome recipes and I can’t wait to try more. I really do want to try a new recipe every week over here  icon biggrin Skinny Taste Dinner Winner!

The recipe I chose was Crock pot Chicken Taco Chili!

I knew this would be a recipe Mike and I would both enjoy very much, it was a HIT! So so good!

I topped it with chunky guacamole, which is a fave of mine at Trader Joe’s.

I did have rice on the bottom of the soup, rice is a perfect pair with this. I used this Uncle Ben’s rice, very good! We love the microwave rice bags over here! Perfect one to go with this chili!

Such a delicious and easy meal, I highly recommend making this! I know you will love it!

I also did something for the first time last night, I watched The Bachelor! Yes, I am a bachelor newbie and so far I like it! Whoa! Some of those girls are cray though, haha!

I told mike he had to watch it with me to see how sane I really am and how lucky he is to have me  icon wink Skinny Taste Dinner Winner!

I’m excited to watch, a new show for me to watch and I love tweeting back and forth with other friends watching it!

I hadn’t watched the Bachelor/ Bachelorette in YEARS but decided to watch this year – WOW, I agree those girls are CRAZY!!! But it should be entertaining! :)

I love egg & turkey bacon sandwiches lately… I need to try it with some hummus! Sounds yummy! My husband always saves his massive peanut butter jars for me too, and they make the best OIAJ. I just need an extra big spoon to help me get to the bottom though. ;) I’ve watched Bachelor seasons on and off throughout the past several years, and I will definitely be watching this season! I love Sean! I didn’t get a chance to watch it last night, but plan on it today.

First of all, I love having egg/hummus combo! One of my faves for sure!! That slow cooker recipe also sounds really good! I’m a biiiiig skinny taste fan! Oh, and I used to watch the bachelor all the time during the first few seasons, but I’ve gotten out of it now a bit! It sure is addicting! I hope you’re having a wonderfully amazing day! Xox

We had Chilli last night too! It was deer meat though and I put it over Quinoa. Oh, and we go Texas-Style…NO Beans! (because I hate them!)

I made that a couple weeks ago! I also served it over rice- it was really yummy. Skinny Taste has become one if my dinner go-to sites because of the easy and healthy recipes!

I’m not a bachelor fan, I’ve watched it a couple of times but can’t bring myself to stay into it because the couples never stay together. :-/

I am testing skinny taste’s buffalo cauliflower bites this week and am THIS EXCITED! I used to watch the bachelor when it was in it’s early seasons with my mom -one particular season he didn’t chose the girl we wanted and we were heartbroken. So much that I haven’t watched it since! haha

I have tried a couple of recipes from Skinny Taste and I loved them! I need to make this one again because it’s so good! :)

I watch the Bachelor but I didn’t watch it last night because Mike likes watching it with me and he’s been away on business. Hopefully I’ll watch it sometime this week.

Hi Anna! Welcome and nice to meet you! Glad you found my blog!

Nope you are not blind! I amy have never really posted the details!

All you do is cook the oats the night before and refrigerate overnight!

I usually use 1/2 cup oats, 1 cup almond milk or water and sometimes you have to add more liquid in the morning! Adding yogurt to the oats makes them creamy too!

Next time try your chili over cornbread. That’s how we do it and it’s delish. Then if we have leftovers I put that over baked sweet potato fries with a little cheese for a healthier take on chili cheese fries. :)

Okay you know what, I need a new show to watch, because I’m totally over Biggest Loser. I’m going to start watching the Bachelor and tweet with you. :)

My husband and kids love those uncle bens 90 second rices as well. I hate them! I think they taste awful, except maybe the very plain ones like jasmine or basmati. My family likes the creamy four cheese and the rice pilaf. Bleck. Hahahah.

I too got sucked into the Bachelor! I was telling myself “just don’t even WATCH the first episode and don’t get hooked!” But I’m weak.
What was up with all the drunk women? Sweet Tater Katie looked beautiful and definitely didn’t cause any embarrassment or drama- good for her. :) Too bad she wasn’t on it more!
Oh- and also- thanks for sharing this recipe. It looks delicious!!

The chili looks amazing! I definitely need to try that out! I actually am kind of bored with the Bachelor now…shocker. It’s all the same sappy music, crying, arguing haha. Maybe it will get better though! I always just get everyone confused the first few episodes so end up skipping them. I think I need to make hummus! You have me craving it. I hope your elliptical gets fixed soon! Annoying when that happens.
