Slow Cooker Cheesy Chicken Chili

I have so much LOVE for my slow cooker! Honestly it is the best thing ever and if you do not own one, I wish I could buy every single person one that doesn’t. Dinner is SO easy thanks to it, I use it mostly only for dinner. I do need to try oats in it one day.

I really want to use my slow cooker even more this fall and winter and have been eyeing up these cookbooks for inspiration…

I think I am going to put a couple on my christmas list. I do love to make new meals and I am sure there are some great recipes in these books!

I made a really yummy chili in my slow cooker on halloween! I have seen this recipe on iCookbook, one of my favorite apps! The recipe called for cooking the chili in a skillet, but I just knew it would be better slow cooked all day instead.

chicken chili 768x1024 Slow Cooker Cheesy Chicken Chili

Cheesy Chicken Chili

  • 1 lb boneless and skinless chicken breasts cut into 3/4 chunks
  • 2 tablespoons ground cumin
  • 1 jar 16 oz salsa
  • 2 cans great northern beans, drained and rinsed
  • 1 cup frozen corn ( I used a small bag of frozen corn )
  • Shredded colby jack cheese or whatever cheese you like for topping!

Combine all ingredients in crockpot, cook on high for 6 hours, and you got a great meal!

*You can also add rice to your bowl or tortilla chips! We added rice to ours, was so good!

yums maybe i can try to make this with “chicken” haha. I have a slow cooker but I have only used it once which is pretty lame because I begged for it, for Christmas lol

Mmm. I looove chili! It’s one of my favorite meals during the Winter. I tend to not use my slow cooker for making chili, just because I hate waiting that long ha ha. I’m so impatient. This looks so delicious!

YUM! I just made a slow cooker dinner last night … chicken tortilla soup! I love slow cookers on cool autumn days. And I get to think less when I get home from work too ;)

Love the crock pot/slow cooker. For the last few weeks, it’s been a goal of mine to use it twice a week. I don’t cook so it’s been interesting. Two meals turned out, one not so much lol

I have been on Pinterest searching for more ideas. Vegetarian (or fish) meals.

It’s nice on nights that Kev and I workout late, it’s already done for us. The Gluten Free cookbook looks interesting.

Seriously, is there anything easier than a slow cooker? Unfortunately, I never use mine. My anti-stress is cooking and baking so I don’t really enjoy the whole “set it and forget it” slow cooker method. However, there are times where I think to myself that I should have put it in a slow cooker. Normally when I have all night study sessions and no time to cook.

I’ve always loved my slow cooker for when I was short on time. Since the birth of my son 11 weeks ago I’ve used the slow cooker for everything from chilli to steel cut oats. Speaking of which here are a few great oats recipes for you to try out :)

Heart the slow cooker – your chili looks delicious. One thing I like to make is a teriyaki, pineapple pork roast – YUMMERS! Just put the pork roast in, some teriyaki sauce, some water and a can of pineapple chucks and you have pulled pork. Have a Great One:)

That looks delicious!! I use my crockpot at least once a week! In fact, I’m using it right now, making Tangy Lemon Chicken. A new recipe using lemon jello! I can’t imagine how that’s going to turn out!
One of my faves is to make peach cobbler in the slow cooker. There is just nothing like it!! I get the recipe here
